The flavor of authentic chummus is very different from that of American chummus. Instead of being overpowered by garlic or being thick and pasty, this chummus is creamy and delicate in flavor. It is consumed as a complete meal spread out in a dish and drizzled with fresh olive oil while still warm and fresh. With pita, raw onion slices, or just a fork, it is scooped up. USE CANNED Garbanzo BEANS, NOT CHICKPEAS!

Garbanzo beans should be rinsed before being put in a pot.

Put in at least one inch of water to cover the area.
