Banana Oat Muffins with Sour Cream
These chewy muffins are packed with oats and garnished with a sweet and crunchy topping.
Set oven to 350 degrees Fahrenheit (175 degrees C).
12 muffin tins should be greased or lined with paper liners.
One cup of rolled oats should be processed in a food processor until they are ground.
Combine ground oats, flour, 1 tablespoon rolled oats, chopped walnuts, baking soda, cinnamon, and salt in a large bowl.
The butter and sugar are whipped together until light and fluffy in a different bowl.
Once each egg has been added, stir in the banana and vanilla.
Add sour cream and stir.
Combine the oat and flour with the egg mixture.
Pour the batter into the prepared muffin tins.
