Beignets
Homemade beignets? Yes! Here is a surprisingly simple recipe for the well-known fritters from New Orleans. They are unbeatable for breakfast, brunch, dessert, or a snack.
yeast is dissolved in warm water.
Pour into a big bowl, then add salt, sugar, and evaporated milk.
Blend in 4 cups of flour after adding it.
Incorporate shortening.
Add the final 3 cups of flour and stir.
For at least two hours or up to 24 hours, cover and chill.
1/8-inch thick dough should be rolled out on a floured surface.

Beignets should be fried in batches until browned and puffy.
