Buñuelos
With a generous amount of cinnamon-sugar on top, these traditional Mexican dough fritters make 16 for a festive Christmas treat.
In a big bowl, whisk together eggs and 1/4 cup sugar until thick and lemon-colored.
Add in 1 teaspoon vegetable oil.
Salt, baking powder, and 1 1/2 cups of flour should be combined, then slowly add to the egg mixture while thoroughly blending.
When the dough is smooth, spread it out on a board that has been dusted with flour.
16 evenly sized balls of dough should be formed.
Make a circle out of each one that is about 5 inches in diameter.
Allow to stand uncovered for about 10 minutes on wax paper.
In the meantime, stir 1 cup sugar and cinnamon together in a small bowl until well combined.
350 degrees Fahrenheit should be reached for the temperature of the oil in a deep pan (175 degrees C)
