Chef John’s Baked Eggs
Eggs are baked in a spicy marinara sauce and topped with cream and Parmigiano-Reggiano, for a rich and creamy brunch dish.
Set oven to 400 degrees Fahrenheit (200 degrees C).
About 1/4 inch of marinara sauce should cover the bottom of a small baking dish.
Add salt, black pepper, parsley, and red pepper flakes.
Create a small well for the eggs in the middle of the sauce.
Each egg should be cracked into a ramekin before being added to the baking dish with the marinara sauce.
Parmigiano-Reggiano cheese, olive oil, and cream are sprinkled on top.
To taste, season with black pepper and salt.
