Chicken in Mole Sauce
Chicken is simmered in a sauce made with chili powder, almonds, banana, cinnamon, tortillas, pine nuts, sesame seeds, and chocolate for a delicious main course.
Save the breasts when you cut the chickens into pieces.
Place all of the chicken pieces in a deep saucepan over medium heat, excluding the breasts.
Also add the onion, garlic, and chicken broth.
Cook for 25 minutes with the lid on the pan.
Add the chicken breasts, cut in half, to the saucepan and simmer for an additional 20 minutes, or until the juices run clear and the chicken is no longer pink at the bone.
When inserted close to the bone, an instant-read thermometer should register 165 degrees F.
(74 degrees C).
The chicken should be moved to a cutting board.
Cut the chicken into bite-sized pieces after removing the skin and bones.
