Chorizo con Queso
This quick and simple queso dip, which you should serve with tortilla chips, pairs well with the Mexican cheese and green chiles.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
a large skillet should be heated to medium.
In a hot skillet, cook and stir the chorizo for 5 to 7 minutes, or until it is browned and crumbly.
Cook the onion and garlic for an additional 4 to 5 minutes, or until transparent.
Butter should sizzle when heated in a pan over a medium-high heat.
Add the flour and whisk for about five minutes, or until a paste forms.
Add milk and stir continuously for about 5 more minutes, or until sauce starts to thicken.
Add the shredded cheese, green chiles, and chorizo mixture to a bowl.
Stir continuously until thick and smooth.
Mixture should be placed in a shallow baking dish.
Bake for about 25 minutes in the preheated oven, or until browned.
