Coconut Banana Cookies
Coconut flour and coconut oil give these soft cookies – sweetened only with mashed bananas – a subtle coconut flavor.
Use the convection setting to preheat the oven to 300 degrees F (150 degrees C).
1 teaspoon of coconut oil should be used to grease 2 cookie sheets.
In a small bowl, combine salt, baking soda, cream of tartar, and coconut flour.
Combine the eggs and bananas.
Vanilla extract and 1/3 cup coconut oil in a different bowl.
Until creamy, beat with an electric mixer.
Add the flour mixture gradually and keep mixing.
Scoops of cookie dough should be dropped onto the prepared baking sheets.
Use the back of a spoon to flatten the cookies.
Bake for 35 minutes in a preheated oven or until dry.
