Corn in a Cup (Elote en Vaso)
This simple recipe for layers of corn with Mexican cream, lime juice, cotija cheese, and spices teaches you how to make elote en vaso (corn in a cup).
Put the corn kernels in a pot with the salted water, and then bring to a boil.
Simmer for two to three minutes until tender on medium-low heat.
Corn is drained and put back in the pan to dry.
10 serving bowls should each contain 3/4 cup of corn.
Melt 2 tablespoons of butter in each bowl by stirring it in.
Each bowl should contain 1/4 cup Mexican crema and 1/4 cup lime juice.
Add salt and 1/8 teaspoon of chili powder to the dish.
