Eggnog Quick Bread
This eggnog bread is delicious served with coffee or for Christmas breakfast.
Set oven to 350 degrees Fahrenheit (175 degrees C).
One 9×5-inch loaf pan or three 3×5-inch loaf pans should only have the bottom greased.
The eggs, eggnog, rum extract, sugar, vanilla, and butter should all be combined.
Combine the flour, baking powder, salt, and nutmeg in a sieve.
Pour into prepared pan or pans after adding to eggnog mixture and stirring just long enough to moisten.
A tester inserted in the center of the large loaf should come out clean after baking for 40 to 60 minutes.
The smaller pans need to bake bread for 35 to 40 minutes.
After 10 minutes of cooling, remove from pan.
Refrigerate after completely cooling, then wrap tightly in plastic wrap or foil.
