Filipino Corned Beef and Cabbage
This corned beef and cabbage dish from the Philippines is a delicious Asian twist on the traditional Irish dish.
In a big pot over medium heat, melt the butter and the oil.
Cook the onion and garlic for about 5 minutes, or until the onion is soft and translucent.
For about three minutes, add tomatoes and heat through.
Add the cabbage and stir; cook for 5 minutes, or until soft.
About 3 minutes later, add a splash of chicken stock and finish heating.
Add the corned beef, and cook for about 10 minutes, or until thoroughly heated and the flavours are blended.
