Instead of breading mozzarella sticks, try Chef John’s crispier, more contemporary recipe that starts with choux pastry.

Salt, water, and butter should all be combined in a pan over medium-high heat.

Flour is added all at once, the heat is then turned down to medium.

Until a dough begins to form, stir with a wooden spoon or spatula.

Cook the dough for 2 to 3 minutes while scraping it up and stirring it.

Take the dough off the heat and place it in a mixing bowl.

Wait five to ten minutes, until it’s no longer hot but is still very warm.

Cayenne and freshly ground black pepper should be added along with the egg.

Mixture will come together into a very soft, sticky dough if you whisk it vigorously.

Use a spatula now and gather the dough into a ball.

Refrigerate in the bowl for about an hour until cool after wrapping the dough and spatula in plastic wrap.
