Lebkuchen are classic German gingerbread cakes that are sweetened with honey and decorated with a straightforward lemon glaze as a wonderful holiday treat.

Using an electric mixer, thoroughly blend the brown sugar, honey, and egg in a large bowl before adding the molasses.

To make a sticky dough, combine the flour, nutmeg, cinnamon, cloves, allspice, and baking soda in a separate bowl.

Add almonds and fruit peel candies after mixing.

Dough should be chilled overnight.

Set the oven to 400 degrees Fahrenheit (200 degrees C).

Bakeware should be greased or lined.

Roll out the dough to a thickness of 1/4 inch on a lightly dusted surface.

Make rectangles measuring 2 x 3 inches.

Place the cookies on the prepared cookie sheets 1 1/2 inches apart.

Bake for 10 to 12 minutes in a preheated oven, or until lightly browned.
