Greek Pizza with Spinach, Feta and Olives
Sun dried tomatoes, spinach, and Kalamata olives boldly flavor this easy pizza.
Heat the oven to 450 degrees and adjust the oven rack to the bottom position.
In a small bowl, combine 1/2 cup of feta, mayonnaise, and garlic.
On a cookie sheet, place the pizza crust; spread the mayonnaise mixture over the crust; then top with the tomatoes, olives, and oregano.
Bake for about 10 minutes, or until crisp and thoroughly heated.
Combine the spinach, onion, and 1 tablespoon of sun-dried tomato oil.
Add the spinach mixture and the final 1/2 cup of feta cheese to the hot pizza.
Return to oven and bake for an additional two minutes or until cheese melts.
Slice into 6 pieces, then serve.
