Haddock Au Gratin
Haddock baked in a cream sauce seasoned with mustard and Cheddar and Monterey Jack cheeses.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Butter a medium- or large-sized baking dish lightly.
Dry and rinse the fillets.
Add 1 teaspoon of salt and 1/8 teaspoon of pepper for seasoning.
Melt butter over medium heat in a skillet or frying pan.
In butter, saute onion until golden.
Add the flour and stir until combined.
Add 1/2 teaspoon salt and mustard to the light and heavy creams.
Cook while stirring continuously until thickened.
Cheeses are added after the heat is removed.
Apply sauce to the fish and top with paprika.
Bake for 30 minutes, or until bubbly and browned, in a preheated oven.
