Huckleberry Muffins with Oat Bran
These simple baked muffins have a chewy texture from oat bran and a sweet flavor from fresh huckleberries.
Set the oven to 375 degrees Fahrenheit (190 degrees C).
Grease a muffin pan with 12 cups.
In a bowl, mix together the flour, sugar, baking powder, cinnamon, baking soda, ginger, and salt.
Eggs, almond milk, and canola oil should all be added to a big bowl.
With a wire whisk, blend in the oat bran.
Add the flour mixture and combine the batter just until combined.
Huckleberries are added after folding.
Fill each prepared muffin cup with batter, about two-thirds full.
For about 20 minutes, bake in the preheated oven, until the top is just beginning to brown.
After taking it out of the oven, let it cool for five minutes before transferring it to a serving platter or wire rack to finish cooling.
