Hunan Peppered Pork
This traditional recipe for Hunan peppered pork delivers plenty of heat with each bite thanks to hot green chiles stir-fried with the pork.
In a wok or large skillet, heat 1 tablespoon oil over medium-high heat until smoking.
Sauté the garlic and ginger for 30 to 60 seconds, or until fragrant.
Add the pork to the wok and cook it for 5 to 7 minutes, stirring frequently.
Place the pork on a plate.
Over medium-high heat, add the remaining 2 tablespoons oil to the same wok and saute the peppers for about 2 minutes, or until well-coated and fragrant.
Salt the pork generously and add it to the peppers.
Cook and stir mixture for an additional 5 to 7 minutes, or until peppers are soft.
Add enough soy sauce to the pork mixture to give it colour and the desired amount of saltiness.
