Beef enchiladas with chiles and cheese are perfect for potlucks and gatherings; kids love them, and they are delicious and easy to make.

Set oven to 350 degrees Fahrenheit (175 degrees C).

Over medium-high heat, cook and stir ground beef, onion, one can of green chiles, and taco seasoning for 6 to 8 minutes, or until meat is browned.

Eliminate extra fat.

In a saucepan over medium-low heat, stir together sour cream, cream of chicken soup, and 1 can green chiles until heated through, about 10 minutes.

Half of the warmed sour cream mixture should be added to a 9×13-inch baking dish.

Place a tortilla’s center with the ground beef mixture.

In the 9×13-inch baking dish, roll tortillas and place them on top of the sour cream mixture.

Top with Cheddar cheese after spreading the remaining sour cream mixture over the tortillas.
