Italian Sausage and Bean Soup
On a chilly winter night, this Italian sausage and bean soup, made with Italian turkey sausage and garbanzo beans, is the ideal way to stay warm.
Over medium heat, a pot is heated.
Cook and stir turkey sausage in the hot pot for 5 to 7 minutes, or until it is browned and crumbly.
Stir carrots, onions, and mushrooms.
Garlic and 1/4 cup parsley are added to sausage.
Cook and stir the onion for 7 to 10 minutes, until it is soft.
Pour liquid beef bouillon cubes, sage, and water garbanzo beans into the sausage mixture.
Bring to a boil, cover, lower the heat, and simmer for about 10 minutes, or until the carrots are tender.
Remove any accumulated fat by skimming it off.
Add the remaining 4 teaspoons of parsley as a garnish and season with salt and pepper.
