Kewa Datshi (Bhutanese Dish)
Traditional Bhutanese dish Kewa Datshi, which translates to “potato and cheese,” is a vegetarian stew made with chiles and garlic.

Chili peppers and garlic should be cooked and stirred in oil over medium heat for 2 to 3 minutes, or until golden and fragrant.

Add onion; stir-fry for 5 to 7 minutes, or until translucent.

Potatoes should be coated in oil after being mixed with the onion mixture.

After adding salt and chile powder to the potato mixture, add water.

Bring to a boil, then lower the heat and simmer for 10 to 15 minutes, adding more water as needed to keep the potatoes tender.

Turn down the heat to low and sprinkle fresh cheese over the gravy.

Stir slowly for about 5 minutes, or until the cheese has melted and spread evenly.

Add some red pepper flakes as a garnish.
