Layered Raspberry Dream
Graham cracker crust, cream cheese filling, raspberries in gelatin, whipped topping, and a dusting of graham cracker crumbs make up a lovely layered raspberry dessert.
In a bowl, combine the graham cracker crumbs, brown sugar, cinnamon, and butter.
The remaining graham cracker mixture should be pressed into a 9×13-inch dish, saving 1/2 cup for later use.
About 30 minutes of refrigeration will make the crust firm.
In a bowl, combine cream cheese, confectioners’ sugar, and 1 teaspoon vanilla extract and beat until fluffy.
Spread cream cheese mixture over graham cracker crust, then chill for an additional 30 minutes or so until firm.
In a different, big bowl, combine raspberry gelatin and boiling water; whisk until gelatin is dissolved; then add lemon juice.
Warm gelatin should be gently folded into frozen raspberries; otherwise, the gelatin will start to set.
Cover the cream cheese layer in the pan with the raspberry mixture.
