Linda’s Enchiladas (Revised)
Chicken enchiladas made with green enchilada sauce and green chile peppers are a kicked-up-a-notch version of traditional enchiladas.
In a large skillet, add the chicken and cover with water.
Then, add the Parmesan cheese and the two chopped garlic cloves.
Cook chicken for 28 minutes or until the center is no longer pink.
Bring water to a boil.
Remove the skillet from the heat and set aside 1/2 cup of the water mixture.
Chicken should be moved to a work surface and shredded with two forks.
