Marinated Green Beans with Olives, Tomatoes, and Feta
The green beans, kalamata olives, and tomatoes in this marinated green bean salad are mixed with red wine vinegar, garlic, and oregano before being topped with feta cheese for a lovely side dish.
Over medium heat, bring a sizable pot of salted water to a boil.
Add the green beans and cook for 8 to 10 minutes, or until just barely tender but still crisp.
Green beans should be immediately drained and dropped into ice water to stop further cooking.
Beans should be drained and put in a small serving bowl.
In a skillet over medium heat, warm the olive oil.
For about 30 seconds, sauté garlic in oil.
Take the skillet off the stove.
Add the salt, pepper, olives, tomatoes, vinegar, and oregano.
Green beans are coated evenly after the mixture has been poured over them.
Oregano sprigs are used as a garnish, followed by feta cheese.
at least three hours to chill before serving.
