Mashed Sweet Potatoes and Pears
This sweet potato mash has ripe pears poached in white wine, which gives it a light flavor.
In a small saucepan over high heat, combine the water and wine made from pears.
Set the heat to medium-low and simmer the pears for 5 to 10 minutes, or until they are soft.
Wine with pears removed; set aside.
Put the sweet potatoes in a big pot and add water to cover.
Over high heat, bring to a boil; then, reduce heat to medium-low, cover, and simmer for about 20 minutes, or until the food is tender.
After draining, let the potatoes steam dry for a few seconds.
Sweet potatoes should be mashed until smooth after being combined with the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg.
Serve hot after transferring to a serving dish.
