Melissa’s Grandma’s Ginger Lace Cookies
This easy lace cookie recipe dates back to the WWI era and features a spiced ginger and molasses flavor, proving that retro recipes are still as delicious today.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Using an electric stand mixer, combine 2 cups sugar, shortening, and molasses in a bowl and beat until smooth, being careful not to overbeat.
30 seconds of mixing after adding eggs.
Salt, baking soda, cinnamon, ginger, and flour should all be combined in a separate bowl.
When the dough is stiff, add the flour mixture to the sugar mixture and stir just until combined.
In a small bowl, add 2 tablespoons of sugar.
Form 1-inch balls out of the cookie dough.
Making sure not to flatten, roll in sugar.
Affix to ungreased cookie sheets.
