No-Fry Easy Zucchini Parmesan
This no-fry variation of Zucchini Parmesan is topped with a cheese mixture and baked until golden, making it the ideal side dish for busy days.
Heat up the oven’s broiler while positioning the oven rack about 6 inches from the heat source.
Butter an 8-inch baking dish.
Over low heat, warm oil in a big skillet.
Add the garlic and stir for about a minute, until fragrant.
Add black pepper, salt, and zucchini.
Turn up the heat; cook and stir for about 7 minutes, or until the zucchini is almost soft.
Transferring the prepared baking pan to the excess liquid-drained area.
Zucchini should be covered in a mixture of Mexican cheese and Parmesan cheese.
Bake for about seven minutes in a preheated oven, or until cheese has melted and is beginning to brown.
