Oven-Fried Orange Roughy
A combination of cornmeal, bread crumbs, and dill weed gives this light alternative to pan-fried fish a savory flavor in less than 25 minutes.
Set the oven to 500 degrees Fahrenheit (260 degrees C).
Place the oven rack just above the oven’s center.
Grease a 13×9-inch baking dish liberally.
In a small bowl, combine the cornmeal, bread crumbs, salt, paprika, dill, and black pepper.
Put the milk in a different bowl.
Orange roughy is coated on all sides after being dipped in milk and then pressed into bread crumbs.
To ensure that all of the bread crumbs fall off, gently toss in your hands.
While breading the remainder, place the breaded orange roughy in the prepared baking dish in a single layer.
Over the pieces of breaded fish, drizzle some butter.
Bake for about 10 minutes in a preheated oven, or until the fish flakes easily with a fork.
