Pecan-Ricotta Waffles
These waffles are crispy on the outside, soft on the inside, with a little crunch from the pecans, and ricotta adds tenderness, richness, and great texture.
Set the oven to 200 degrees Fahrenheit (95 degrees C).
As directed by the manufacturer, preheat a waffle iron.
In a mixing bowl, combine salt, flour, brown sugar, baking powder, and baking soda.
Eggs, buttermilk ricotta cheese, and eggs should all be combined in a large bowl and smoothed out using an electric mixer.
Add the melted butter and the maple flavoring.
Don’t overmix the batter or the waffles will turn out tough and chewy.
Add the flour mixture to the buttermilk mixture and stir until just combined but still lumpy.
If necessary, lightly mist the waffle iron grids with cooking spray and proceed with the recipe as directed by the manufacturer.
Depending on the size of your waffle maker, add 1 cup of batter and spread it out evenly.
Then, add 2 to 3 tablespoons of pecans to the batter.
