Peruvian Lomo Saltado
This lomo saltado recipe is a traditional Peruvian dish of sliced beef stir-fried with hot chiles, juicy tomatoes, onion, and crispy French fries.
Set the oven to 425 degrees Fahrenheit (220 degrees C).
Place a single layer of frozen French fries on an ungreased baking sheet.
Bake for 22 to 24 minutes in a preheated oven, or until light golden.
In the meantime, in a frying pan, heat 2 tablespoons of oil over medium-high heat.
Sliced beef should be salt and pepper-seasoned.
Beef should be cooked and stirred in hot oil until the juices come to the surface.
Beef should be moved to a plate using a slotted spoon.
Beef drippings are used to cook and stir onions until they are translucent, 3 to 4 minutes.
Aji amarillo and tomato are added and cooked until the tomato softens.
Add the vinegar and the soy sauce.
