Porcupine Meatballs II
tasty and straightforward. Rice and beef meatballs simmered in tomato soup. Excellent for a quick meal on a hectic schedule.
Add the tomato soup and water to a medium mixing bowl and stir to combine.
Mix thoroughly, then reserve.
Combine the ground beef, instant rice, onion, salt, pepper, and 1/2 cup of the soup mixture in a large mixing bowl.
Mix well, then roll into 1-inch balls.
Put the meatballs in a sizable skillet and heat it to medium.
Bring to a boil and then add the remaining soup mixture.
Simmer for 15 to 20 minutes, or until the rice is done and the meatballs are well-browned.
