Ramp Sausage Gravy
Fresh ramps and grated apple bring spring-ready flavor to this breakfast pork gravy, best served over hot biscuits.
A 12-inch cast iron or other large, thick-bottomed skillet should be heated over medium-high heat.
Use a wooden spoon to break up the sausage into small pieces after adding it.
On medium-high heat, add the apple and all but 1/4 cup of the ramps, and cook for 6 to 8 minutes, or until the sausage is browned and crumbly.
Reduce the heat to medium-low and evenly sprinkle the flour over the sausage before stirring to thoroughly coat it.

Add milk and thoroughly stir.
Cook for another 5 to 7 minutes, or until the gravy has thickened but is still somewhat loose.
Get rid of the heat.
Add salt and pepper to taste.
When serving, top with any remaining ramps.
