Rhubarb Salsa
Rhubarb makes a great addition to a springtime salsa that’s so nice with chicken, fish, on a taco, or just scooped up in a tortilla chip.
The rhubarb should be added to a pot of boiling water while it is still on medium heat and simmer for 2 minutes to blanch.
Drain and allow to cool in a colander in the sink.
Rhubarb, apple, green onions, lime juice, honey, and jalapeno pepper should all be thoroughly combined after cooling.
