Roast Chicken with Grapefruit
A wonderful roast chicken recipe with bacon and grapefruit served with a flambeed sauce.

Working over a bowl to gather the juice, segment the grapefruits into segments while removing the peel’s pith and membranes.

To get as much juice out of the remaining skin and membranes as you can, squeeze them into the bowl.

Set the oven to 375 degrees Fahrenheit (190 degrees C).

Salt and pepper should be combined in a small bowl.

To separate the skin from the meat, gently press fingers under the skin of the chicken thighs and breasts.

Rub the salt mixture over the skin and inside any crevices.

Place a few sprigs of parsley and half of the suprames inside the cavity of the chicken.

Transfer the chicken to a rack in a baking pan or a cast-iron skillet with the breast side facing up.
