Roasted Squash and Sweet Potatoes with Goat Cheese
A simple recipe for roasted squash and sweet potatoes. The addition of goat cheese and honey turns this vegetarian side dish into a gourmet experience.
Set the oven to 400 degrees Fahrenheit (200 degrees C).
Using parchment paper or olive oil, grease a baking sheet.
In a bowl, mix the sweet potatoes and butternut squash.
Sprinkle with salt and pepper and drizzle with olive oil.
Spread out onto the baking sheet you have prepared.
