Roasted Sweet Potatoes with Sweet Miso-Scallion Butter
These sweet potatoes halves are roasted in the oven and topped with a sweet and savory miso-scallion butter.
Set the oven to 425 degrees Fahrenheit (220 degrees C).
Spray cooking spray on a baking sheet before lining it with foil.
Apply olive oil to the cut sides of the sweet potatoes.
Place the food on the baking sheet cut side down.
Use olive oil to brush the skins.
For about 35 minutes, roast in the preheated oven until thoroughly cooked.
Make the miso-scallion butter in the meantime.
In a small saucepan set over medium heat, warm the coconut oil.
Cook for 3 to 4 minutes after adding the onion and ginger.
Miso is added after the heat is turned off, and it is pressed into the pan with the back of a spoon to soften it.
Add scallion, brown sugar, and soy sauce.
Approximately 3 minutes of low heat and constant stirring is required to completely melt the sugar and warm the mixture.
Never boil.
