Rocky Road Cookies with Marshmallows
These chocolate chip- and mini-marshmallow-topped cookies are made as a tribute to Rocky Road ice cream.
Set the oven to 375 degrees Fahrenheit (190 degrees C).
Brown sugar and butter should be combined and whipped until creamy.
Stir in the egg.
To make the dough come together, combine flour, baking powder, and half of the chopped chocolate.
Allowing space for the cookies to spread, drop spoonfuls of the dough onto a cookie sheet.
Slightly flatten.
Bake in the preheated oven for about 5 minutes, or until the tops are slightly gooey but the edges are cooked.
From the oven, remove.
Insert the tops with the remaining chocolate and mini marshmallows.
Bake for another 5 minutes or so, or until the tops are set.
Remove cookies carefully to avoid burning marshmallows.
