Rubber Cookies
a spice cookie that has been sealed with an apple and baked until it is rubbery perfect using sorghum instead of molasses.

Set oven to 350 degrees Fahrenheit (175 degrees C).

Grease baking trays.

Heat the sorghum while stirring continuously in a Dutch oven or large saucepan over medium heat.

After adding baking soda, turn off the heat.

Add the sugar and eggs and thoroughly combine.

Mix the sorghum mixture with the salt, cinnamon, allspice, cloves, and nutmeg.

Flour should be gradually incorporated until the dough is stiff enough to roll out.

The quantity of flour can be changed.

The dough should be rolled out to a thickness of 1/4 inch on a lightly dusted surface.

Using cookie cutters, cut into the desired shapes.

I enjoy using a pizza cutter to cut them into squares.

On the prepared cookie sheets, spread out the cookies 1 inch apart.
