Scallops with Arugula, Lentils, and Butter Beans
This very delicious scallops with arugula, lentils, and butter beans recipe is a savory spring dish.
In a bowl, combine the scallops, olive oil, paprika, cayenne pepper, salt, and black pepper.
Stir until the scallops are evenly coated.
A nonstick skillet is warmed up over high heat.
Cook scallops for three minutes on each side in a hot skillet until browned.
Scallops should be moved to a bowl after heat is reduced to medium.
In the same skillet, cook and stir the garlic for 30 seconds, or until fragrant.
Add butter beans, lemon juice, and Italian seasoning; cook and stir for 1 to 2 minutes, or until beans are just beginning to turn golden.
Cook and stir the arugula in the skillet with the cooked lentils for about 30 seconds, or until it starts to wilt.
