Spicy Beef and Bean Enchilada Pie
Chiles and pepperjack cheese give this hearty beef and black bean enchilada pie a spicy kick!
Set oven to 400 degrees Fahrenheit (200 degrees C).
Over medium-high heat, cook and stir the ground beef and onions until the meat is browned and crumbly, about 7 to 10 minutes.
Add the garlic and cook for 30 seconds or until fragrant.
Add the taco seasoning mix, green chiles, cilantro, and diced tomatoes.
Get rid of the heat.
In a bowl, combine black beans with one can of red enchilada sauce until smooth.
In a different bowl, combine Monterey Jack cheese and pepperjack cheese.
A cast-iron skillet should be heated to medium.
Cook each tortilla for about 15 seconds on each side, or until just beginning to get crisp.
