Sweet Persimmon Fireside Cookies
This recipe is a wonderful way to use persimmons. These bars are moist and fragrant with sweet spices.
Set oven to 375 degrees Fahrenheit (190 degrees C).
Butter a 9×13-inch baking dish.
All-purpose flour, cake flour, cinnamon, ginger, baking soda, and salt should be sifted together.
Cream the butter, sugar, and lemon rind in a medium bowl until fluffy and smooth.
Add the egg and the persimmon pulp, and combine thoroughly.
Add the flour mixture gradually while stirring, then blend thoroughly.
Spread the batter evenly after pouring it into the prepared pan.
Bake for 25 minutes, or until golden brown, in a preheated oven.
Take out of the oven, then allow to cool.
Sift confectioners’ sugar over the top of the bars once they have completely cooled, then cut them into bars.
