Tamagoyaki (Japanese Rolled Omelette)
If you’re looking to cook authentic Japanese food at home, try making tamagoyaki, a rolled omelette seasoned with soy sauce, mirin, and dashi stock.
In a bowl, combine the eggs, dashi stock, sugar, mirin, and soy sauce.
In a sizable nonstick skillet set over medium-high heat, heat 1/3 of the oil.
A third of the egg mixture should be added, and you should quickly swirl the pan to coat the bottom evenly.
As soon as the omelette is done, begin rolling it up from one side to the other.
Keep the roll aside and then add another third of the oil and another third of the egg to the skillet.
Swirl the pan to ensure that the first roll and the area around and beneath it are covered.
Cook until the desired consistency is achieved.
Roll the first roll up from the side so that it is now in the middle.
