Toddler-Friendly Carrot and Zucchini Muffins
Give your toddler a healthy dose of carrots and zucchini with these whole wheat muffins sweetened with only maple syrup and applesauce.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Cooking spray or paper liners can be used to grease or line a 12-cup muffin pan.
In a big bowl, combine the flour, oats, baking soda, baking powder, cinnamon, and salt.
In a different bowl, whisk the eggs, applesauce, maple syrup, and vanilla.
Add the egg mixture to the flour mixture, stirring to combine thoroughly.
Stir in the zucchini and carrot.
Fill each cup with 2/3 of the batter as you spoon it into the prepared muffin tins.
Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
For five minutes, let the muffin tin cool.
Before serving to ravenous toddlers, transfer to a wire rack and let cool completely for about 20 minutes.
