Vegan Chocolate Zucchini Bread
This rich, moist chocolate zucchini bread is an easy vegan treat that’s great for breakfast or dessert.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Butter a 9×5-inch loaf pan.
Using an electric mixer, combine the cane sugar, almond milk, applesauce, coconut oil, and vanilla in a large mixing bowl.
In a different bowl, stir together the flour, cocoa powder, baking powder, cinnamon, salt, and baking soda.
Use an electric mixer to gradually add the dry mixture to the wet ingredients until everything is thoroughly combined.
Add the zucchini and 1/4 cup chocolate chips after stirring.
Fill the bread pan with batter, then top with the remaining 1/4 cup chocolate chips.
