Vietnamese Pickled Daikon Radish and Carrots
This crispy refrigerated pickle combination with daikon and carrots is best known as an addition to banh mi sandwiches. Add cucumber and onions, if desired.
In a bowl, mix the salt, sugar, and vinegar.
Salt and sugar must be stirred until they dissolve.
Put carrots and daikon in a clean container.
Cover the vegetables completely with the vinegar mixture by pouring it on top.
Refrigerate for at least one day, ideally three.
Seal jar.
