Spicy Chicken and Black Bean Bake
This spicy chicken and black bean bake recipe is a great way to use up leftover cooked chicken for a Mexican-inspired weeknight dinner.
Set oven to 350 degrees Fahrenheit (175 degrees C).
In a sizable bowl, combine the chicken, sour cream, cream cheese, taco seasoning, red bell pepper, red onion, and salt.
In a different bowl, combine the hot water, cumin, and black beans; mash them with a fork roughly to combine.
In the bottom of a 9×9-inch baking dish, arrange three tortillas.
Add half of the salsa, half of the black bean mixture, and half of the chicken mixture to the tortillas.
Layer the remaining ingredients again, finishing with the chicken mixture.
Sprinkle mozzarella cheese over the casserole.
Bake for 30 to 35 minutes in a preheated oven, or until the top is golden.
