Ben Lippen School Coffee Cake (Mrs. Hathaway’s recipe)
This is a delicious breakfast coffee cake that sustained thousands of boarding school students for nearly 40 years!
Set the oven to 375 degrees Fahrenheit (190 degrees C).
1/3 cup sugar and 1/4 cup butter should be smoothed out in a big bowl.
Blend egg and vanilla well after adding them.
Salt, baking powder, and 1 1/2 cups of flour should be combined.
Stir alternately with milk into the creamed mixture.
In a 9×9 inch baking pan, spread evenly.
Combine 2 tablespoons flour, 5 tablespoons sugar, and cinnamon in a small bowl.
Until the mixture is crumbly, add 2 tablespoons of butter and work it in with your fingers.
Sprinkle over the cake’s top.
Bake for 25 minutes, or until a knife inserted in the centre of the dish comes out clean.
