Fancy Crusted Rosemary Scalloped Potatoes
In this fancy side dish, potato slices are layered around a baking dish to create a beautiful crust for a creamy rosemary potato filling.
Set oven to 400 degrees Fahrenheit (200 degrees C).
Spray cooking spray in an 8-inch baking dish.
In a bowl, combine Parmesan cheese, rosemary, and garlic.
Use a mandolin set to the thinnest setting and slice three or four potatoes.
Use the mandolin’s thicker setting to slice the remaining potatoes.
Lay thin potato slices in an even layer, 2 to 3 slices deep, in the bottom of the baking dish that has been prepared.
To create a layer that is four slices deep, arrange the remaining thin slices along the sides of the baking dish so that half an inch sticks over the rim.
