German Chocolate Cake Bites
These little chocolate bites are a mix between petit fours and mini cakes that are sandwiched together with jam and covered in chocolate.
Set oven to 400 degrees Fahrenheit (200 degrees C).
Use parchment paper to line a baking sheet with a rim.
Egg whites should be electric mixer-blended until stiff peaks form in a glass, metal, or ceramic bowl.
In a large bowl, combine the egg yolks, sugar, and 1 cup plus 2 tablespoons of butter.
Use an electric mixer to beat the mixture until it is smooth and creamy.
In the top of a double boiler set over simmering water, add 4 ounces of milk chocolate.
Until the chocolate is melted, stir frequently, scraping down the sides to prevent scorching, for about 5 minutes.
Remove from heat, then stir in the remaining 3 ounces of milk chocolate until it has completely melted.
