Dosas (Indian-style Pancakes)
This version of the traditional South Indian pancake known as a dosa, which is thin and crepe-like, is flavored with a mixture of spices.
In a mixing bowl, combine the whole wheat and brown rice flours.
To make a thin batter, stir in the water.
Incorporate the onion, garlic, cilantro, sugar, cumin, and mustard seeds.

For at least one hour or overnight, cover and chill.
Heat the oil in a skillet over medium heat to prepare the dosas.
Spread a thin layer of batter over the bottom of the skillet after adding 1/4 cup of batter.
Cook for 1 minute, flip, and cook for 1 minute more.
Take out of the pan.
